    Pimm's Jellies

    • Preparation time: 15 minutes plus 3-4 hours chilling
    • Total time: 15 minutes plus 3-4 hours chilling

    Serves: 2

    Ingredients

    3-4 sheets leaf gelatine
    300ml lemonade
    3 tbsp Pimm's No.1 Cup
    Juice of ½ a lime
    2 tsp caster sugar
    1-2 strawberries, halved
    2 thin slices of cucumber
    2 sprigs mint

    Method

    1. Soak the leaf gelatine in cold water for 5 minutes or until soft. Meanwhile, heat 100ml of the lemonade until just boiling then remove from the heat. Lift the gelatine out of the water, give it a squeeze then stir into the hot lemonade until dissolved. Add the Pimm's, lime juice, sugar and remaining lemonade. Pour through a sieve into a jug.
    2. Pour the jelly into 2 large glasses and chill for 3-4 hours until set. Serve, decorated with the strawberries, cucumber slices and mint sprigs.

    Cook's tips

    To set the jellies more quickly, chill the second batch of lemonade and the Pimm's before adding to the gelatine, and chill the glasses at the bottom of the fridge, where it is colder.
