Pine nut and sesame seed dunkers

Who can dunk their biscuit for the longest time without it dropping into their tea? Get the competition started with these nutty biscuits that attach to your mug!

Ingredients

30g sesame seeds
120g plain flour
1⁄2 tsp bicarbonate of soda
1⁄2 tsp baking powder
60g salted butter, chilled and cut into small cubes
60g light brown muscovado sugar
3 tbsp golden syrup
2 tbsp mixed chopped peel
40g pine nuts

Method

1. Preheat the oven to 200°C, gas mark 6. Whizz the sesame seeds in a food processor for 15 seconds to release the oils. Add the flour, bicarbonate of soda and baking powder, then whizz for a few seconds. Add the butter; pulse until the mixture resembles breadcrumbs. Add the sugar, syrup, mixed peel and pine nuts, and pulse until the mixture just comes together.

2. Roll the dough into 20 walnut-sized balls. Place about 3cm apart on parchment-lined baking sheets and bake for 8-10 minutes, until golden. As soon as they come out of the oven, press the end of a skewer along the radius of each biscuit to make a slit. Cool completely on the baking sheets, then hang on mugs of tea and dunk to your heart’s content.
