Peri peri chicken with sweet potatoes

Removing the chicken skin makes this tangy dish low in saturated fat.

800g pack essential Waitrose
British Chicken Drumsticks, skin removed
½ tsp hot chilli powder
1 tsp sweet smoked paprika
2 tbsp essential Waitrose Tomato Purée
2 tbsp essential Waitrose White Wine Vinegar
1 essential Waitrose Green Pepper, diced
400g essential Waitrose Sweet Potatoes, diced


1. Preheat the oven to 200ºC, gas mark 6. Score the chicken flesh with a sharp knife.

2. Mix together the spices, purée, vinegar and 3 tbsp water in a large bowl, and stir in the chicken to coat all over.

3. Lay chicken on a baking tray. Add the pepper and sweet potatoes and roast for 30 minutes until the chicken is cooked through with no pink meat.
