Pork & chicory chipotle roast

Serves: 2
Juice 1 orange
2 tsp chipotle paste
250g piece of pork fillet, excess fat and sinew trimmed
250g pack chicory, quartered lengthways
1 red onion, cut into thick wedges
400g can chick peas, drained and rinsed
½ x 25g pack parsley, chopped
½ x 28g pack coriander, chopped
1. Preheat your oven to 200°C, gas mark 6. Mix the orange juice and chipotle paste in a large bowl. Cut the pork fillet in half. Add to the bowl together with the chicory, red onion and chick peas. Toss together and season. Tip onto a roasting tray.
2. Roast for 30-35 minutes until the pork is cooked through. Leave to rest for 5 minutes, then slice the pork and stir the chopped herbs through the vegetables just before serving.
Cook’s tip For a vegetarian dish, leave out the pork and toss the roasted chicory, onion and chick peas with grilled feta or halloumi instead.
