Pork with pear & mustard

Serves: 2
1 tbsp olive oil
2 pork loin chops, trimmed of excess fat
300ml chicken stock
1 tbsp wholegrain mustard
1 Conference pear, cored and sliced
½ x 25g pack parsley, chopped
400g pack essential Waitrose Mashed Potato
1. Heat the oil in a frying pan and fry the pork chops for 5 minutes. Add the stock and mustard and simmer for 5 minutes. Add the pears, cover and cook for 3 minutes until just tender and the pork is cooked throughout. Stir in the parsley.
2. Microwave the mashed potato according to pack instructions and serve with the pork and sauce.
