Heavy with fragrant juniper, cider and juicy prunes, this dish brings out the superior flavour of Waitrose Free Range Pork.
If you want to cook the casserole the day before, leave out the spinach and pine kernels, and add them once the casserole has been reheated on the hob and is piping hot and ready to serve.
