Pork with harissa and apricot couscous

Serves: 1
½ tbsp oil
1 essential Waitrose British Pork Loin Steak (about 150g)
50g essential Waitrose Couscous
25g dried apricots, chopped
1 tsp harissa paste
Juice ½ essential Waitrose Lemon
½ essential Waitrose Courgette, grated
1. Heat the oil in a small frying pan and fry the pork gently for 16-18 minutes, turning occasionally until thoroughly cooked throughout.
2. Meanwhile, place the remaining ingredients in a bowl and pour over 100ml boiling water, stir, cover with clingfilm and leave for 5 minutes. Then fluff up with a fork and season.
3. Serve the pork on top of the couscous.
