Pork with sauteed potatoes

Serves: 4
600g essential Waitrose New Potatoes, cut into 2cm dice
3 tbsp vegetable oil
1 essential Waitrose Onion, chopped
1 Pack of 6 essential Waitrose Tomatoes, chopped
1 tbsp essential Waitrose Balsamic Vinegar
1 x ½ 25g pack fresh chives,chopped
350g essential Waitrose British Pork Fillet, cut into 8
1. Cook the potatoes in boiling water for 10 minutes, then drain. Meanwhile, heat 1 tbsp oil in a saucepan and fry the onion for 4-5 minutes. Add the tomatoes, vinegar and a dash of water and cook covered for 5 minutes. Season to taste, add ½ of the chives and set aside.
2. Place the pork pieces between 2 sheets of clingfilm and beat with a rolling pin until thin, season well. Heat 1 tbsp oil in a large frying pan and fry the pork in 2 batches for 3-4 minutes, turning half way. Set aside and keep warm.
3. Add the remaining oil to the frying pan and fry the potatoes for 10 minutes until golden. Season and stir in the remaining chives. Serve the pork with the potatoes and spoon over the tomato sauce.
