Portobello Mushrooms with tomatoes and goats cheese

This is one a made up last night to use up some mushrooms.

  • 4 Lg or 8 Sm Portobello Mushrooms
    8 Baby Plum tomatoes (quartered)
    1 clove of Garlic (squished and chopped)
    1 small Chilli (deseeded and finely chopped)
    Soft Goats cheese
    Handful of chopped Parsley (or any favourite herb)
    small quantity of olive oil


  1. Put mushrooms on a backing sheet and place in oven or 10 mins at 170 fan oven. Meanwhile mix together tomatoes, garlic, chillies and a splash of olive oil. Remove mushrooms from oven and stuff with tomatoe mixture. Top with a slice of goats cheese and place back in oven for a further 10 mins. Serve with rocket salad.
