1 tbsp cider vinegar
3 tbsp olive oil
1 tsp wholegrain mustard
1 crushed garlic clove
Pinch of sugar
750g new potatoes
Sliced red onion
Roughly chopped parsley
- Whisk together 1 tbsp cider vinegar, 3 tbsp olive oil, 1 tsp wholegrain mustard, 1 crushed garlic clove and a pinch of sugar.
- Cook 750g new potatoes; halve any larger potatoes and dress while still warm with the vinaigrette. Toss with some capers, chopped gherkins and sliced red onion.
- Fold in some roughly chopped parsley, season and serve warm or cold.
