Prawn & aubergine tagine with couscous

Serves: 2

Ingredients

1 tbsp olive oil
1 aubergine, diced
1 carrot, diced
1 onion, diced
2 tsp harissa paste
50g dates, sliced
400g can chopped tomatoes
150g pack raw king prawns
100g Waitrose Love Life Giant Wholewheat Couscous 

Method

1. Heat the oil in a large saucepan and fry the vegetables for 5 minutes. Add the harissa and cook for 1 minute. Stir in the dates and tomatoes,
cover and simmer for 10 minutes until tender.

2. Stir in the prawns and cook for 3-4 minutes.

3. Meanwhile, cook the couscous in boiling water for 6 minutes, drain and serve with the tagine.
