Prawn & rice noodle salad

Ingredients

300g pack Waitrose Rice Noodles
1 essential Waitrose Carrot, coarsely grated
150g pack essential Waitrose Cooked King Prawns
4 essential Waitrose Salad Onions, sliced
½ x 28g pack coriander, leaves only
Juice 1 essential Waitrose Lime
1 tbsp light soy sauce
2 tsp Thai fish sauce

Method

1. Place the noodles in a large bowl and cover with boiling water, leave for 5 minutes then drain.

2. Add the carrot, prawns, salad onions and coriander leaves to the noodles.

3. Whisk together the lime juice, soy sauce and fish sauce and mix into the noodle salad. Serve in large bowls with chopsticks.
