Quick & easy spiced berry jam

Makes: 1 x 450g jar
225g mixed berries, such as raspberries, blueberries or strawberries
225g Tate & Lyle Fairtrade Jam Sugar
1 star anise
2 juniper berries or a 2cm piece cinnamon
½ lemon, juice and finely grated zest
1. Hull and halve the berries if necessary, then place them in a saucepan and heat gently until they soften and their juices start to run. Press the berries with the edge of a wooden spoon to break them up, then stir in the sugar, spices and lemon zest and juice. Heat gently until the sugar dissolves, stirring frequently.
2. Turn up the heat to high and boil the mixture for about 5-6 minutes until the setting point is reached. To test, place 1 tsp of the jam on a small plate and chill for 2 minutes. The surface should then wrinkle when pushed with a finger. If necessary, boil the jam a little longer. If the surface of the jam becomes foamy, skim it with a slotted spoon.
3. Ladle the jam into a 450g sterilised jam jar, cover with a waxed disc and a lid. Label and store for up to 12 months.
