Quick pork tortillas with chunky guacamole

Serves: 4
1 tbsp olive oil 500g pack essential Waitrose British Pork Mince
3-4 tsp (or to taste) chipotle paste
2 red onions, diced
2 mixed peppers (eg red and yellow), deseeded and diced
2 large ripe avocados
1x ½ x 28g pack fresh coriander, whole leaves only
2 limes, quartered
320g pack Discovery Plain Flour Tortillas
Soured cream, to serve
1. Warm the oil in a large frying pan over a high heat. Add the mince and fry for 6-8 minutes until well browned. Stir in the chipotle paste, all but about 2 tbsp of the onion, and the peppers. Reduce the heat to low, cover and cook for a further 10 minutes, stirring occasionally.
2. Add 150ml of boiling water, scraping up any caramelised pieces from the base of the pan with a wooden spoon. Season and remove from the heat.
3. While the mince is cooking, make the guacamole. Cut the avocados in half, remove the stones and peel. Cut the flesh into 1-2cm chunks. Place in a bowl with the remaining onion, pepper and coriander and squeeze over 2 tbsp lime juice. Mix well, season and add more lime juice, to taste.
4. Warm the tortillas according to the pack instructions. To serve, spoon some of the mince mixture into the centre of a tortilla, top with the guacamole and roll up. Serve with soured cream and the remaining lime wedges to squeeze over.
