Raspberry Mojito

12 fresh mint leaves

2 tbsp lime juice

1 tsp caster sugar

100ml Havana Club Anejo Especial Rum

50g fresh raspberries, crushed

essential Waitrose Club Soda

Sprig of mint, to garnish


Lightly muddle the mint leaves, lime juice and sugar at the bottom of a tall glass. Add crushed ice to half-fill the glass then pour over the rum and crushed raspberries. Stir lightly and top with soda. Garnish with the sprig of mint.
