Red cabbage with sloe gin & juniper

Serves: 6 - 8
1 tbsp vegetable oil
30g unsalted butter
2 red onions, sliced
1 small red cabbage, finely sliced
1 bramley apple, grated
1 large cinnamon stick
2 star anise
1 tsp juniper berries, crushed
11⁄2 tsp salt
4 tbsp red wine vinegar
5 tbsp soft light brown sugar
100ml sloe gin
1. Preheat the oven to 150 ̊C, gas mark 2. Heat the oil and butter in a large ovenproof casserole dish over a medium heat. Add the onion and cabbage and fry gently for 5 minutes, stirring frequently. Stir in the remaining ingredients and 200ml water.
2. Cover and bake for 1 hour 45 minutes, until tender and the liquid has evaporated. Stir every 30 minutes; add more water if needed.
