  • Paprika glazed ribs

    For the glazed ribs
    225g/8oz soft light brown sugar

    2 tsp smoked paprika

    2 tsp cayenne pepper

    2 tsp garlic powder

    1 tsp ground all spice powder

    1 tsp chili flakes

    1 tbsp sea salt

    1.5kg/3lb 5oz pork ribs, cut into thirds

    vegetable oil, for grilling

    For the spicy coleslaw
    1 tbsp wholegrain mustard

    1 tbsp sweet chilli sauce

    1 lime, juice only

    1 red chilli, chopped

    125ml/4½fl oz mayonnaise

    1 white cabbage, finely sliced

    1 red onion, finely sliced

    3 carrots, finely sliced

    salt and freshly ground black pepper
