Roast Beef with Glazed Chicory

Thin slices or very rare roast beef are ideal with the sophisticated flavour fo caramelised chicory - a silky mash would make an ideal accompaniment.

Use a lighter red wine for the gravy.
Get stuck in to magnificently deep and complex French country red: decant it four hours before serving.
