A simple and quick delicious supper! For best results use either Maris Piper or Desiree potatoes
Roasted Cod with Castilian Potatoes
•700g potatoes , cut into medium sized chunks
•3 tbsp olive oil
•1 small onion, finely diced (150g)
•¼ tsp chilli flakes
•1½ tsp paprika
•600g frozen cod or haddock fillets, defrosted
- 1.Preheat the oven to 200oC, gas mark 6.
- 2.Boil the potatoes for 5 minutes and drain.
- 3.Heat 2 tbsp oil in a large frying pan and fry the potatoes for 5-7 minutes over a medium heat. Add the onions and fry for a further 3 minutes, or until the potatoes are tender. Add the chilli and paprika and cook for 1 minute. Season with a pinch of salt.
- 4.Meanwhile, place the fish on a baking tray, drizzle with remaining oil and season, roast for 10 minutes, or until cooked. Serve the potatoes topped with the fish.
