    Salmon with crispy herb and olive crust

    Serves: 4

    Ingredients

    2 x 300g packs Waitrose Scottish Salmon Fillets
    75g Waitrose Sea Salt Hand Cooked Crisps
    50g pitted black olives, chopped
    25g pack fresh chives, chopped

    Method

    1. Preheat the oven to 200oC, gas mark 6. Place the salmon close together in a small lightly greased roasting tin.

    2. Place the crisps in a food processor and pulse to make coarse crumbs. Mix with the olives and chives and press onto the salmon.

    3. Bake for 15–20 minutes until golden and cooked throughout. Serve with a green rocket salad
