Salmon with mushy peas and light tartare sauce

Ingredients

4 Waitrose Select Farm salmon fillets

125g essential Waitrose british half fat crème fraîche

2 tsp capers

2 chopped cornichons

Juice of ½ lemon

1 tbsp chopped parsley

2 x 300g cans essential Waitrose marrow fat peas

2 tbsp chopped mint

Method

  1. Preheat the oven to 180˚C, gas mark 4. Place 4 Waitrose Select Farm salmon fillets on a roasting tray and cook for 15 minutes.
  2. Meanwhile, make the sauce: combine 125g essential Waitrose british half fat crème fraîche with 2 tsp capers, 2 chopped cornichons, the juice of ½ lemon and 1 tbsp chopped parsley.
  3. Tip 2 x 300g cans essential Waitrose marrow fat peas into a small pan and heat for 4–5 minutes. Drain the peas and gently mash using a fork, then stir in 2 tbsp chopped mint. Serve the salmon with the mushy peas and a spoonful of light tartare sauce on the side.
