    Sausage sandwiches

    A quick and warming, midweek meal

    • Preparation time: 10 minutes
    • Cooking time: 20 minutes
    • Total time: 30 minutes 30 minutes

    Serves: 4

    Ingredients

    • 2 essential Waitrose red onions, halved and finely sliced
    • 1 tbsp olive oil
    • 8 lincolnshire pork sausages
    • 2 tbsp essential Waitrose balsamic vinegar
    • 1 tsp light brown soft sugar
    • ½ tsp fresh thyme leaves
    • 120g essential Waitrose cherry tomatoes, halved
    • 4 white rolls

    Method

    1. Fry the onions in the oil for about 15 minutes until soft, stirring from time to time.
    2. While the onions are cooking, place the sausages under the grill and cook for 12 minutes, turning a couple of times.
    3. When the onions are soft, add the vinegar, sugar, thyme and some black pepper and stir for 2 minutes. Add the tomatoes and cook until warmed through.
    4. Halve the rolls and toast lightly on the cut side.
    5. Fill the rolls with the onions, tomatoes and sausages. Serve straight away.
