Sausages and mustard with rosti topping

1½ tbsp olive oil
454g pack essential Waitrose British Pork 8 Sausages
1 essential Waitrose Onion, sliced
200g essential Waitrose Cup Mushrooms, halved
1 tbsp essential Waitrose Wholegrain Mustard
1 tbsp essential Waitrose Dijon Mustard
1 tbsp essential Waitrose Clear Honey
750g essential Waitrose Potatoes, grated
1. Preheat the oven to 220ºC, gas mark 7. Heat 1 tbsp oil in a frying pan and fry the sausages, onion and mushrooms for 5 minutes until browned. Transfer to an ovenproof serving dish.
2. Mix the mustards and honey together and pour over the sausages.
3. Cook the grated potato in boiling water for 3–5 minutes then drain, rinse and return to the pan. Season then stir in the remaining oil. Scatter over the sausage mixture and bake for 25 minutes until the sausages are cooked and the rösti is golden
