    Seafood curry

    Frozen ingredients

    150g frozen Cooks’ Ingredients diced onions
    1 tsp frozen Cooks’ Ingredients chopped garlic
    2 tsp frozen Cooks’ Ingredients chopped ginger
    2 tsp frozen Cooks’ Ingredients red chilli

    400g bag frozen fruits de mer
    2 x 180g bags frozen essential Waitrose basmati or white rice
    1 tbsp olive oil
    2 tbsp Cooks’ Ingredients korma curry paste
    227g can essential Waitrose chopped tomatoes
    200ml essential Waitrose coconut milk


    1. Heat the oil in a large pan over a medium-high heat. Stir in the onion, garlic, ginger and chilli and cook for 5 minutes until softened. Add the curry paste and cook for 2 minutes, then stir in the tomatoes and coconut milk. Bring to the boil and simmer for 5 minutes to thicken.

    2. Add the frozen fruits de mer and simmer for another 5 minutes until the seafood is cooked through. Meanwhile, heat the rice according to pack instructions. Serve the curry with the rice and a sprinkling of chopped fresh coriander, if liked.
