Seared Garlic and Thyme Steak Bites

Juice and zest of 1 lime
300–400g Aberdeen Angus sirloin steak
1 crushed garlic clove
1 tbsp fresh thyme leaves
1 tsp Worcestershire sauce
2 tsp olive oil


  1. Take a 3cm thick Aberdeen Angus sirloin steak (from the meat service counter; about 300–400g) and place in a large shallow dish. Rub in 1 crushed garlic clove, 1 tbsp fresh thyme leaves, the grated zest of 1 lime, 1 tsp Worcestershire sauce and 2 tsp olive oil. Leave to marinate for a couple of hours, or overnight. Squeeze over the lime juice and marinate for a further 15 minutes.
  2. Sear the steak in a griddle or large frying pan set over a high heat for 3–5 minutes on each side. Transfer to a plate, cover with foil and rest for 10 minutes. Cut into 12 even-sized cubes, spear with cocktail sticks, and arrange on a platter. Serve warm.
