Seriously Chocolatey Seriously white chocolatey pannacotta with strawberries

A rethink of the traditional pannacotta! this is a seriously rich and creamy white chocolate pannacotta with a summer twist. The creamy pannacotta is topped with a lovely summer strawberry coulis. As you delve into the dessert and reach the bottom, you reach a strawberry surprise - the fruit offsets the rich creamy chocolate and cream dessert. The hint of mint lifts the dessert

What makes it the ultimate summer Seriously From Waitrose dessert?

It's rich yet fruity - a panacotta made richer with white chocolate yum! but it contains the ultimate British symbol of summer - the strawberry!


  • 200ml double cream, 50mil full fat milk, 20g caster sugar, 1 gelatine sheet (or agar-agar for veggies), 65g white chocolate.
    3 whole strawberries
    Coulis - 60g strawberries, squeeze lemon juice with 1 tablespoon mint syrup


  1. Combine the milk cream and sugar over a low heat. Stir until the sugar is melted. When the mixture is bubbling gently, stir in the white chocolate until melted - add the drained and soaked gelatine to the warm mixture and stir until dissolved. Slice the strawberries and place at the bottom of a mould, pour the mixture into the mould and chill for 6 hours or overnight. Puree the strawberries with lemom and mint syrup and strain through a fine sieve. Turn the moulds out and pour over the coulis.
