  • 200 gm Ginger Biscuits, 75 gm butter, 300gm cream cheese, 200 gm white chocolate, 500 ml double cream, 150gm rasberries X2, 50gm icing sugar X2, lemon juice


  1. Make a base using crushed biscuits and melted butter. Cool in fridge. Topping: Melt chocolate gently Whip cream, add cream cheese, chocolate and icing sugar Put 1/2 mixture on base, then raspberries and top with rest of cream mixture. Decorate with raspberries. Serve with raspberry sauce(made from pureed raspberries, icing sugar and lemon juice)
