Seriously Creamy Cafe au creme

Coffee creme brulee topped with cream whipped with white chocolate and sprinkled with grated dark chocolate

What makes it the ultimate summer Seriously From Waitrose dessert?

This dessert is cool, creamy and smooth. The sweet cream topping contrasts with the strong taste of the coffee cream. Whether it is summer or some other time of year coffee is a popular taste (witness the growth in coffee houses) yet there are few luxurious coffee flavoured desserts available here. I was inspired by the coffee cremes in little glass pots available in French supermarkets. Chic and environmentally friendly!


  • Brulee - 5 egg yolks, 3oz caster sugar, 12 floz double cream, 4oz whole milk, 4 tbsps coffee granules
    Topping - 2oz white chocolate, 8fl oz double cream
    1oz dark chocolate, grated


  1. Brulee - warm cream, milk, coffee and 1oz caster sugar. Whisk egg yolks and 2oz sugar then add warmed cream mixture. Pour into ramekin dishe. Put into roasting tin, pour boiling water into the tin until it comes halfway up the ramekin dishes and put in oven at GM1, 140C for 40 minutes. Cool and then chill in fridge. Topping - melt chocolate, add to cream and whip until it holds soft peaks. Place spoonfuls of the cream on top of each coffee cream and sprinkle with grated chocolate.
