Light, creamy, easy to make, no slaving over hot stove - the perfect dessert for a summer party.
• 300 gr Philadelphia or Waitrose cream cheese
• 100 gr caster sugar
• 300 ml whipped cream
• 1 tsp vanilla essence
• 1 tbs gelatine softened/melted in 3 tbs hot water
• 1 packet (300 gr) hob nobs, crushed
• 50 gr butter
• 3 egg whites
Crush biscuits reserve about 1/4 cup and to the rest add 50gr melted butter.
Line base and sides of 8 inch deep serving dish
Whip egg whites stiff
Mix together cream cheese, sugar, vanilla essence and whipped cream. Add softened gelatin (make sure it is completely dissolved and cool so it doesn’t go stringy).
Fold in stiffly beaten egg whites
Place in crumb base and top with edge of reserved crumbs.
Chill overnight or several hours and serve with fruit or coulis
