  • 250g ginger biscuits - crushed
    150g unsalted butter
    1 x 397g can condensed milk
    4 x limes - rind & juice
    280ml double cream - whipped
    2 x tbsp lemonchello
    1 x lime
    1 x lemon


  1. Mix crushed biscuits with melted butter & line an 21.5cm spring clip tin. Chill Mix condensed milk with lime zest & gradually whisk in lime juice Fold in whipped cream & lemonchello & pour over biscuit base Decorate with lemon & lime slices & chill Pie will freeze Serve with wedges of lemon & lime & a glass of lemonchello
