Lemon, Honey and Mascapone Posset

What makes it the ultimate summer Seriously From Waitrose dessert?

Lemon desserts are classic light summer dishes, that bring back memories of homemade lemondade and holidays in the sun. Wildflower honey has a lovely taste and gives this dessert an indulgent twist. Perfect for hot summer nights or a guilty treat!


  • Instead of using double cream, I prefer to use Mascapone, lemon juice, lemon zest, wild flower honey and fine white sugar.


  1. Blend the mascapone, lemon zest, honey and sugar and then gently bring to the boil for about 2-3 minutes. Remove and leave to cool down for approx 10 minutes. Then add the lemon juice, stirring slowly to help thicken the mixture as this reacts with the mascapone. Decant into dishes and leave to chill for a few hours.
