  • 170g digestive or ginger biscuits
    55g butter
    285 ml double cream
    1 tin condensed milk
    2 lemons - rind and juice
    A few raspberries/blackcurrants/blueberries to decorate


  1. Crush the biscuits, mix with melted butte and line a20 cm flan tin Whip the cream and combine with condensed milk (I do mine in magimix) Slowly add the lemon juice to the mixture with half the grated rind Slather the mixture onto biscuit base Chill for 2 hours, decorate with remaining lemon rind and scatter your chosen fruit
