The combination of ginger and lemon, although it might sound strange, is fantastic. They go really well together.
For the base:
Biscuit crumbs (digestives, or any)
For the meringue:
4 large egg whites
200 grams of white sugar
Juice from squeezed lemon or lemon flavouring
1. Ground the biscuits into fine crumbs. 2. Warm butter in a frying pan, when melted add the biscuit crumbs and ginger. Mix. Spread in a small baking tray and firm down with spoon.3. Whisk egg whites in a bowl, slowly add sugarand lemon zest, juice. When fluffy add to baking tray. Cook for 90 mins.
