Seriously Creamy Pannacottas with mixed summer berries - serves 6-8

A deliciously creamy and fruity dessert served in glasses or ramekins.

A deliciously easy dessert that everyone raves over and guarantees loads of compliments!


  • 300ml double cream
    300ml milk
    120g caster sugar
    Seeds from 1 vanilla pod, split lengthways
    3 gelantine leaves
    2 tbsp soft brown sugar
    200g mixed summer berries (fresh or frozen & thawed)


  1. Put first 4 ingredients in pan over low heat til sugar has dissolved. Simmer for 5 mins. Soak gelantine in cold water til soft. Drain & squeeze. Remove the cream mixture & leave to cool slightly - then divide between serving dishes. Allow to cool. Meanwhile dissolve brown sugar with a little water in pan over a low heat. Then add berries and simmer gently for 2 minutes. Remove from heat & cool. Pour over the top of the pannacottas. Return to fridge til ready to serve.
