Seriously Creamy Passionfruit and popcorn cheesecake

This is a deliciously creamy, fruity and crunchy cheesecake. Made with passionfuits to give it fruitiness and butterkisk popcorn to give it texture and crunch.

What makes it the ultimate summer Seriously From Waitrose dessert?

Something that is creamy. It should be fruity and sweet. With lots of texture to tantalise your tongue. SERIOUSLY MY PUDDING!


  • 8 oz Cottage cheese
    4 oz Fresh double cream
    2-3 oz unsalted butter
    3 oz Crushed biscuits
    4 oz Caster sugar
    1/2 oz Gelatine 2 Eggs
    1 Pinch of salt
    3 Passion fruits
    1 Small bag of butterkisk popcorn


  1. Make a flan base with butter, biscuits,1 oz of sugar and press into a flan dish and chill. Rub the cottage cheese through a sieve and add the cream cheese. Separate the eggs and add 1 1/2 oz of sugar and a pinch of salt, beat until creamy. Crush the popcorn into crumbs reserving a some decoration. Squeeze the juice and seeds from the passion fruits and add to the cheese mixture along with the popcorn and gelatine made up as per instructions and the whipped egg whites and whipped cream.Decorate.
