The classic summer taste combination of lemon and raspberry combined with a light, fat-less sponge and cool, whipped cream makes for a refreshing and irresistable dessert.


  • For the sponge equal amounts:
    Caster sugar
    Plain flour

    Double Cream
    Lemon Curd
    Raspberry Jam
    Fresh raspberries
    Icing sugar for dusting


  1. Beat equal amounts of eggs and caster sugar until very pale and very thick; slowly fold in an equal amount of plain flour. Line flat tray with baking paper and bake for 13 minutes in a medium oven. Once cool cut out indivdual circles with a ring mould; spread thin layer of raspberry jam onto sponge; whip cream until stiff and combine with lemon curd. Pile cream on top of raspberry jam and, finally, top with fresh raspberries; dust with icing sugar. Chill until ready to serve. "Seriously" yummy!
