What makes it the ultimate summer Seriously From Waitrose dessert?
It is Seriously lemony, Seriously creamy and Seriously delicious
1 packet of 8 trifle sponges
4 oz unsalted butter
6 oz granulated sugar
2 large lemons
10 fl oz double cream (to decorate)
Beat sugar & butter until light & fluffy (takes a good 5 mins)
Add beaten egg yolks - beat well
Beat in lemon juice a little at a time (may curdle - no worry)
Whisk egg whites stiffly and fold in
Add grated lemon rind
Cut sponges in half lengthwise & put layer in 1.5-2 pt souffle dish or cake tin.
Add layer of lemon mix, another layer of sponge, lemon again, finish with sponge.
Cover with foil or plate. Refrigerate overnight, Can leave a couple of days.
Turn out and cover with whipped cream
