  • Egg whites
    Golden caster sugar
    Golden icing sugar
    Double cream
    Lemon curd = sugar, butter, lemons, eggs


  1. Whisk the egg whites with the golden caster sugar, spread on a swiss roll tin and back for 30 mins at a low temp. Turn out onto a piece of greaseproof paper dusted with icing sugar. Meanwhile, wash and pick over the blackberries. Make lemon curd with egg yolks, butter, sugar and lemon and allow to cool. Softly whip the cream and fold through lemon curd, spread over the meringue, fill with the blackberries and roll up from teh short end, dust with more icing sugar and serve.
