Rich buttery pastry case, filled with an indulgent frangipan, into which is swirled a not too sweet blackcurrant puree. I think the contract of flavour would be excellent, and hopefully the visual effect would be stunning too, bearing in mind we 'eat with our eyes'.

What makes it the ultimate summer Seriously From Waitrose dessert?

The contrast of colour of the frangipan and black currant, together with an exciting blend of texture and taste when eaten. I'm almost dribbling with anticipation as I type this. I've also considered that it would need to be mass produced, and like the fact that homegrown blackcurrants can be used, thus supporting English farmers.
