Seriously Fruity Blueberry and white chocolate cheesecake

A delicious light and fruity, baked cheesecake.The combination of the white chocolate, cream cheese and blueberries is enhanced by the subtle almond flavoured base.

  • Base : 50g self raising flour, 50g butter, 50g caster sugar, 50g ground almonds 1/4tsp baking powder, 1 egg.

    Filling :100g white chocolate melted, 3 eggs separated, 100g caster sugar, 600g full fat soft cream cheese, 200g blueberries.
    Icing sugar for dusting


  1. Line base of 20cm spring cake tin with baking parchment.Combine flour,butter,sugar,ground almonds & baking powder in a food processor until like crumbs.Add egg & mix.Turn mix onto lightly floured surface,make into ball & press into base of tin.Whisk together egg yolks & sugar until pale & creamy.Mix in melted chocolate & cream cheese.Whisk egg whites until stiff & fold into cheese mixture.Fold in blueberries,pour into tin.Bake at 170c for 1hr.Leave in oven,door ajar to cool.Chill,dust & serve.
