Two individual summer puddings. The fruit is layered with a moist chocolate cake rather than bread slices. Its layered in discs/rings, rather than forming an outer shell. The chocolate sponge is drizzled with blackcurrant liqueur for extra flavour. A mix of sour cherries and summer berries make up the fruity layers to form a tower. Could also be avaliable in a large flat tart shape for sharing.

Cut out a circle of chocolate cake and lay in the base of an individual tall ring mould, drizzle over a little liqueur. Make a chunky fruit compote with the fruits and add a spoonful on top of the cake base. Add another cake disc, more fruit and a final cake layer. Leave to chill before removing the ring - a chocolate summer fruit tower! Same could be done for a large ring mould to allow it to be cut into slices and shared.
