    Seriously Fruity Fruits of the forest pud with mascarpone

    Ramekin sized pud, simmilar to 'summer pudding' but made with sponge fingers instead of bread.

    What makes it the ultimate summer Seriously From Waitrose dessert?

    Colourful, cool, fresh tasting, easy to serve.


    • 500g mixed fruits of the forest (raspberries, blackberries, cherries, blueberries, whatever you prefer), 100g caster sugar, approx 100ml water, 175g sponge fingers, 200g mascarpone cheese, strawberries and mint to decorate.


    1. Put fruit in pan with water and sugar. Bring to boil and simmer for approx 10 minutes. Cut the sponge fingers to fit sides of 6 ramekins and cover bottom with offcuts. Pour fruit into ramekin making sure liquid goes all over the sponge fingers. Then place some pieces of sponge finger over top and press gently. Leave to set in fridge for about 2 hours. Turn out onto plate and decorate.
