Seriously Fruity Fruity Cup Dessert

A pastry cup half-filled with fruit (my choice is raspberries) and topped with meringue with warm chocolate drizzled over.

What makes it the ultimate summer Seriously From Waitrose dessert?

Sweet and fruity served hot or cold on a warm summer day.


  • 500gm frozen raspberries
    8oz Essential Self Raising Flour
    4oz Margarine
    4oz Sugar
    1 Egg
    2 Egg Whites
    4oz Caster Sugar
    Chocolate for topping
    Makes Two !


  1. Put fruit into a saucepan on a low heat to defrost and simmer a little, then take off heat and allow to cool. Make pastry with the flour, margarine, sugar and beaten egg. Cut in half. Roll out each half and form it into an over-sized cup shape; leaving the sides vertical. Make a meringue with the egg white and caster sugar. Pour half the cooled fruit into each cup and top each with the meringue. Bake in hot oven 150c for 30minutes. When cooked drizzle with chocolate topping.
