Seriously Fruity FRUITY ETON MESS

Dear Waitrose The idea behind this recipe is you provide all the ingredients for a fabulous, seriously indulgent Summer dessert that the buyer finishes off the preparation of at home. By doing this and presenting it to the diners in the buyer’s own glassware it makes it feel “homemade”. Indeed it could be passed off as homemade for the more unscrupulous dinner host! If the dessert was successful, different flavours could be introduced around the base ingredients of meringue, cream and yogurt.

What makes it the ultimate summer Seriously From Waitrose dessert?

Its fresh, full of SUmmer fruits, naughty and full of cream, sweet and crunchy. it involves the customer and makes you feel you have made it yourself from scratch. i would buy it!!!!



    700g fresh strawberries 

    100g raspberries
    Strawberry coulis
    1 tbsp icing sugar,
    200g fresh cream for whipping 

    200g thick Greek-style yoghurt 

    6 plain meringues


  1. INSTRUCTIONS Chop the strawberries roughly into small chunks and and sprinkle with icing sugar. Place the remaining, chopped 100g of strawberries and 100g of raspberries into a bowl and mix up with the strawberry purée. Whip the cream lightly, fold in the yoghurt, and chill. Roughly crush the meringues into bite-sized pieces. 

When you are ready to serve, gently toss the cream, meringue and fruit and pile the lot into a glass bowl. Drizzle with the strawberry purée.
