The tangy fruit flavour is fresh and light as can be, and being whisked makes it sparkle on your tongue and melt in your mouth.
Gently heat fruit until juice runs. Strain through muslin. Add sugar to taste (slightly sharp is best). Make swetened juice into a jelly with gelatine leaves. Leave in a cool place until beginning to set. Whisk using balloon whisk until light and fluffy. Refrigerate until set.
