A delicious cheesecake containing manderine orage segments and crystallised ginger.
What makes it the ultimate summer Seriously From Waitrose dessert?
A desert which is scrummy, tangy and light.
2 tbs warm water.
1/2 level tbs powdered gelatine
8 oz cream cheese
5 - 6 oz mandarin yoghurt
2 level tbs caster sugar
2-3 cubes of crystallised ginger
6 - 8 manadrin orange segments for decoration.
Use crushed Ginger biscuits mixed with butter for the base.
Place water in bowl, add the gelatine,let stand until softened. Blend in the cream cheese and yoghurt and add to the gelatrine (once it has cooled) and the sugar. Chop the ginger into small pieces and stir into the mixture.
Place in fridge for at least 1 hour or until it is firm.
