Seriously Fruity Pineapple Crowned Fruit Pie

A seriously fruity pie on a biscuit base topped with exciting seasonal Waitrose fruits.

The wonderful summer fresh strawberries or raspberries or any other desired fresh seasonal fruit. This desert is Seriously fruity and scrumptous.


  • 1 1/4 cups crushed digestives
    1/4 cup sugar
    6 tablespoons butter or margarine melted
    2 medium bananas sliced
    Lemon juice
    2 cups fresh strawberries, raspberries or other fresh fruit sliced.
    2 teaspoons cornflour
    1 1/2 tins Delmonte crushed pineapple. Or make your own.
    1 teaspoon vanilla
    1/3 cup chopped walnuts


  1. Combine digestives and sugar, stir in butter,. Blend. Chill for one hour. Press mixture into a 9 inch pie plate forming high edge. Dip banana slices in lemon juice arrange in a layer on digestives. Top with sliced strawberries or desired fresh fruit. In a saucepan blend cornflour into undrained pineapple. Cook and stir over medium heat until thickened and bubbly, cook one minute longer. Add vanilla. Spoon mixture over fruit. Chill. Sprinkle with walnuts.
