Seriously Fruity Ricotta Delight

A light double-cream cheese and wild cherry dessert. Serve with shortbread.

  • Serves 4

    250g blackcurrants
    250g redcurrants
    1 tablespoon Waitrose golden caster sugar
    1 tablespoon Kirsch
    250g Galbani Ricotta
    100g Galbani Mascarpone
    50g Rachel’s organic greek style natural yogurt
    1/4 teaspn vanilla essence
    4 sprigs fresh mint


  1. Top and tail fruits, rinse. Put fruits into a saucepan, add the sugar, cook on medium heat for 1 minute, add Kirsch, cook for 2 minutes. Transfer to a bowl, allow to cool. Strain the cold fruits, reserve juice. For the topping, put 100g ricotta in another bowl, add juice, stir until blended to thick consistency. Put 150g ricotta into a clean bowl, add mascarpone, yogurt and vanilla essence, stir gently, spoon into sundae dishes. Layer fruits on top, add the topping, decorate with mint.
