Simple to create but with a true taste of summer the Waitrose way!


  • 1 cup vanilla wafer crumbs
    1/4 cup melted Butter
    16 oz soft cream cheese.
    1/3 cup sugar
    2 tbsp milk
    2 large eggs
    1/2 cup toasted macadamia nuts.
    8 1/2 oz crushed pineapple.
    1 med peeled and sliced kiwi fruit


  1. Mix the vanilla wafer crumbs and butter and press onto the bottom of 9-inch springform pan. Bake at 350 degrees F for 10 minutes. mix the cream cheese, sugar and milk, until well blended. Add the eggs, one at a time, mixing well well after each addition. Stir in nuts; pour over crust. Bake at 350 degrees F for 45 minutes. Loosen the cake from the rim of pan; cool before removing rim of the pan. Chill before serving and top with the fruit.
