line a pie tin or dish with baking parchment, scatter the mixed fruit in the base with a little sugar.
Beat the eggs and sugar together for about 3-4 mins or until it leaves a trail. Combine the flour and almonds then fold into the beaten eggs, carfully to retain the air.
Spread the mixture on top of the fruit base then bake in the oven (about 180c ) for about 15mins.
Turn out onto the serving plate.
